When are sweetcorn in season?
Grown outdoors from August to mid October, with peak season in August and September across Europe..

Buying and storing sweetcorn
Fresh sweetcorn (the ‘Sweet Corn’ type, not field maize) has pale yellow to golden kernels that release milk when pressed. The husks are green and juicy and the silk is pale yellow to light brown. Dry brown husks and shrivelled kernels show old stock. Sweetcorn loses its sugar very quickly: after harvest the sugar turns to starch, so it is best used straight away. In supermarkets you will mostly find tins or frozen, so buy fresh cobs at markets or from the grower.
Store fresh cobs unhusked in the fridge and use them within 1 to 2 days. The kernels lose sweetness and tenderness by the day. To stock up: cut the kernels off the cob, blanch (3 minutes), refresh in cold water and freeze. They keep for up to 12 months. Frozen sweetcorn often tastes better than old fresh cobs, because it is snap-frozen straight after harvest.
Preparing sweetcorn in the Thermomix®
Sweetcorn soup turns out especially creamy in the Thermomix®: cook the kernels (fresh from the cob or frozen) with onions, butter and stock for 20 minutes at 100°C on speed 1, then blend for 10 seconds on speed 10 and pass through a fine sieve for extra silkiness. For a sweetcorn side to go with Cheese Patties we sweat the corn with peppers at Varoma temperature, which gives sweetness without turning to mush.
We make Tortilla Dough with cornflour in the Thermomix®: flour, water and salt on kneading mode for 2 minutes into a smooth dough. For Quesadillas we cut peppers and corn ahead, cook them briefly and then fill the ready-made tortillas. We can also add fresh sweetcorn kernels to salads raw, as they need no pre-cooking.
The most common mistakes with sweetcorn
- Leaving fresh sweetcorn to sit for too long. Sweetcorn turns its sugar into starch, faster the warmer and longer it sits. After 24 hours at room temperature much of the sweetness is gone. Cook or freeze it as soon as you buy it.
- Cooking the cobs for too long. Sweetcorn is done in 8 to 12 minutes in boiling water. Cook it too long and you get rubbery kernels. In the Varoma at Varoma temperature, 15 minutes is enough for a whole cob.
- Buying field maize instead of sweetcorn. Field maize is grown for animal feed and biogas, and the kernels are hard-skinned and starchy. It is only edible after long cooking and is barely sweet. Culinary sweetcorn has pale yellow, plump kernels and is only available fresh in summer and autumn.

How do I cook corn on the cob properly?
Put the cobs into boiling water (no salt needed, some people add sugar to the water) and cook for 8 to 12 minutes, depending on size. In the Thermomix® Varoma at Varoma temperature, cook for 15 to 18 minutes. Serve straight away with butter.
Is frozen sweetcorn as good as fresh?
Often even better than old fresh cobs. Frozen sweetcorn is blanched and snap-frozen straight after harvest, so the sugar content is preserved. Fresh corn from the field on harvest day is best, but frozen is a good alternative out of season.
What is the difference between maize and sweetcorn?
Sweetcorn (Sweet Corn) is a variety with far more sugar and more tender kernels than field maize or popcorn maize. Field maize has hard, starchy kernels and is not suitable for eating raw. When sold as a vegetable it is always sweetcorn.
Can you freeze sweetcorn?
Yes. Cut the kernels off the cob, blanch for 3 minutes, refresh in iced water, drain and freeze in portion bags. It keeps for 12 months. Add it straight from the freezer to soups, quesadillas and salads, no thawing needed.
