These quick breakfast rolls with the Thermomix® need no yeast and no proving time. 300 g flour, 170 g milk, 40 g butter, 1 egg, 1 sachet of baking powder, 40 seconds at speed 5, shape the rolls, bake for 15 minutes. Fresh, warm rolls on the table in 25 minutes.

  • 300 g flour
  • 170 g milk (3.5% fat)
  • 40 g butter
  • 1 egg
  • 1 tsp salt
  • 1 tsp honey
  • 1 sachet baking powder
  • 30 g sunflower seeds
  • 10 g sesame seeds

    Preheat the oven. Preheat the oven to 180°C (fan 160°C, gas mark 3) and line a baking tray with baking paper.

    Mix the dough.

    Add all ingredients except the seeds to the mixing bowl and stir together for 40 seconds / speed 5. Add half the sunflower seeds and sesame seeds and mix for 3 seconds / reverse direction / speed 4.

    Shape and bake the rolls.

    Using 2 tablespoons, shape 8 rolls from the dough and place them on the baking tray. Sprinkle the rolls with the remaining sunflower seeds and sesame seeds and bake on the middle shelf for 15 minutes.

Why baking powder instead of yeast: rolls with no proving time

Classic bread rolls need yeast and at least an hour of proving time. In this recipe, 1 sachet of baking powder does the job instead. The result is slightly denser than yeast rolls, but still light and moist. The 170 g of milk and the egg provide moisture, while the 40 g of butter adds flavour and a soft crumb. The 1 tsp of honey brings a gentle sweetness and helps with browning.

40 seconds at speed 5: do not over-mix the dough

All ingredients (except the seeds) go into the mixing bowl at the same time. 40 seconds at speed 5 is enough to bring the dough together evenly. Do not mix for longer, or the dough will become tough. Then add half of the 30 g sunflower seeds and 10 g sesame seeds and fold in for 3 seconds at reverse direction / speed 4. The reverse direction stops the blade from chopping the seeds.

If you want some rolls without seeds: set aside a portion of the dough first, then fold the seeds into the rest. The amount of seeds can be adjusted to taste or left out entirely.

15 minutes at 180°C: how to tell when the rolls are done

Preheat the oven to 180°C top/bottom heat (160°C fan). Using 2 tablespoons, shape 8 rolls from the dough and place them on a baking tray lined with baking paper. Scatter the remaining sunflower seeds and sesame seeds on top. If you like, brush the surface with a little milk or beaten egg using a pastry brush. This gives an evenly golden-brown crust. Bake on the middle shelf for 15 minutes.

Cheese, ham, chocolate, carrot: 4 variations

  • Cheese rolls: Add 50 g of grated cheese to the dough and sprinkle a little extra cheese on top before baking.
  • Ham rolls: Fold 50 g of diced ham into the dough. Great for a Sunday brunch.
  • Chocolate rolls: Add 50 g of chocolate chips to the dough. A firm favourite with children.
  • Carrot rolls: 100 g of finely grated carrot makes the dough moister and adds a good dose of vitamins.

Another tip: place a dollop of jam or chocolate spread in the centre of each dough portion and seal it shut. This creates filled rolls with a surprise inside when you cut them open.

Freezing and refreshing: how to keep the rolls longer

The rolls taste best straight from the oven, but they will keep for 1 to 2 days at room temperature. To freeze, place the cooled rolls individually in freezer bags. From the freezer, put the rolls straight into the oven: bake at 180°C for 8 to 10 minutes and they will be crisp again. We often bake a double batch and freeze half.

Warm from the oven, the rolls go with everything: butter, cheese salad with the Thermomix®, strawberry jam with white chocolate, or a caramel spice spread.
