Shred the cabbage.
300 g cabbage, cut into rough pieces, into the mixing bowl and chop for 10 seconds / speed 4.
If you want to shred more cabbage, simply repeat the process.
Want finer pieces? No problem. Add 2 extra seconds.

10 seconds at speed 4: rough pieces in, evenly shredded out
Halve the white cabbage, cut out the core and break the halves into rough pieces. Add 300 g of cabbage pieces to the mixing bowl and chop for 10 seconds at speed 4. For larger quantities, work in two batches so the cabbage is shredded evenly. Do not fill the mixing bowl above the 1-litre mark, otherwise large pieces will be left at the top.
Speed 4 or speed 5: when the cabbage becomes too fine
Speed 4 cuts the cabbage into fine strips that still have a bit of bite. That is exactly right for cabbage salad and coleslaw. Speed 5 makes the cabbage finer, almost grated. This works well for stuffed cabbage roll filling or when the cabbage will be cooked in a soup. Speed 6 and above will blend the cabbage, which we do not want here. Better to go 1 to 2 seconds shorter than too long, because you can always chop a little more, but you cannot undo cabbage that is too fine.
Coleslaw, cabbage salad, soup: what to do with the shredded cabbage
The shredded white cabbage can be used straight away. For a classic German cabbage salad, toss the cabbage with vinegar, oil and caraway seeds. For coleslaw, mix with a yoghurt dressing and carrots. In a colourful raw vegetable salad the cabbage works well together with peppers, carrots and sweetcorn. For stews and soups, simply add the cabbage to the stock and cook.
Red cabbage, pointed cabbage, Chinese cabbage: other varieties in the Thermomix®
Red cabbage works exactly the same as white cabbage: 10 seconds at speed 4. Pointed cabbage is softer and only needs 5 to 8 seconds, otherwise it will go mushy. Chinese cabbage has very thin leaves and is better cut with a knife. In the Thermomix® it turns to mush too quickly. For other chopping tasks in the Thermomix®, we have separate guides.
Shredded cabbage keeps for 3 days in the fridge
Shredded white cabbage keeps in an airtight container or a freezer bag in the fridge for 3 to 4 days. To freeze, blanch the shredded cabbage briefly (2 minutes in boiling water, then plunge into ice water), drain well and freeze in portions. It will keep for up to 6 months. Freezing without blanching is also possible, but the texture will be softer once thawed.
