Pink Drink with the Thermomix® is hibiscus tea combined with coconut drink and raspberries. The recipe takes 2 minutes, needs no chilling and tastes of berries rather than artificial sweetener.

We make Pink Drink several times a week in summer. The drink was originally a Starbucks product, but it can be made faster in the Thermomix® and without artificial flavours.

  • 500 g hibiscus tea brewed, cold
  • 500 g unsweetened coconut drink
  • 100 g raspberries
  • 2 tbsp honey
  • ice cubes

    Blend the Thermomix® Pink Drink.

    Add all ingredients except a few raspberries for garnishing to the mixing bowl and blend for 20 seconds / speed 9.

    Serve.

    Divide ice cubes between glasses, top up with Pink Drink and serve garnished with raspberries.

Tip.

Tip: You can vary the type of tea. We recommend a red variety. Forest berry tea or cherry tea work beautifully.

Instead of honey, you can sweeten the Pink Drink with Thermomix® elderflower syrup.

Why hibiscus is the base

Hibiscus tea provides the red colour and a gentle acidity. Other red teas work too, but hibiscus has the berry undertone that pairs well with coconut drink. Forest berry tea or cherry tea deliver more fruit flavour, while hibiscus stays more subtle.

The tea must be cold before you blend. Warm tea melts the ice cubes immediately and the drink becomes watered down. We brew 500 g of hibiscus tea and put it in the fridge for 30 minutes. Alternatively, cool it down with ice cubes and subtract the melted amount from the 500 g.

Coconut drink versus coconut milk

This recipe uses unsweetened coconut drink, not tinned coconut milk. Coconut milk has 17.20% fat, coconut drink only 2.3%. With coconut milk the Pink Drink becomes noticeably richer and the coconut flavour overpowers the raspberries.

Coconut drink is found in the chilled aisle next to oat milk and almond milk. Most varieties are already lightly sweetened, which is why the recipe only uses 2 tbsp of honey. If you use a completely unsweetened coconut drink, you will need 3 to 4 tbsp of honey or another sweetener.

Speed 9 for 20 seconds

Speed 9 chops the raspberries completely and distributes the fruit evenly throughout the drink. At speed 6 or 7 pieces remain that settle against the side of the glass.

20 seconds is enough because the raspberries are soft and the drink stays cold. Blending for longer gives no benefit and would only cause the Thermomix® to generate unnecessary heat.

Raspberries and milk in the Thermomix®

Ice cubes outside the mixing bowl

The ice cubes do not go into the Thermomix®, they go directly into the glass. If you crush ice cubes in the mixing bowl the drink becomes too diluted. The ice cubes are there to keep the drink cold, not to melt into it.

Add 4 to 5 ice cubes per glass, then top up with the Pink Drink. Place the remaining raspberries from the mixing bowl on top as a garnish.

Fresh or frozen raspberries

Both work. Fresh raspberries give a more intense flavour, while frozen ones are available all year round and cheaper. Add frozen raspberries straight from the freezer into the mixing bowl, they thaw during blending.

If you use frozen raspberries, blend the drink for 5 seconds longer (25 seconds at speed 9) so the pieces are fully broken down.

Sweetener variations

Honey is the standard sweetener in this recipe. Elderflower syrup (2 tbsp), maple syrup (3 tbsp) or agave nectar (3 tbsp) also work well. Regular granulated sugar does not dissolve easily in a cold drink, so liquid sweeteners are a better choice.

If you are making the Pink Drink for children, add the honey gradually and taste as you go. Some coconut drinks are already sweeter than others.

Serve straight away

Pink Drink is served immediately after blending. If the drink stands for a while, the raspberry particles settle to the bottom and the top layer becomes paler. Give it a quick stir before serving.

In the fridge the Pink Drink keeps for a maximum of 6 hours. After that the hibiscus tea loses its flavour and the coconut drink begins to separate.
