300 g strawberries, 350 g vanilla ice cream, 350 g milk and 45 seconds on speed 8. That is all it takes for a strawberry milkshake that comes out thicker and creamier than anything a standard blender can manage. Why 350 g of vanilla ice cream makes the shake so creamy
Without ice cream, a milkshake is just strawberry milk. The 350 g of vanilla ice cream brings fat, air and body that milk alone cannot provide. The ice cream emulsifies with the milk to create a thick, coating consistency that clings to the glass rather than running straight through. The 20 g of sugar sounds like very little, but it is exactly right: the vanilla ice cream is already sweetened, and ripe strawberries bring their own sweetness. If you have caught sour strawberries (early season or frozen), you can increase this to 30 g.
Fresh or frozen strawberries: both work
Fresh strawberries give the most intense flavour. But frozen strawberries have one advantage: the shake comes out colder and thicker, because the ice cream melts more slowly. We use frozen strawberries straight from the freezer, no thawing needed. The Thermomix® handles them on speed 8 without any trouble.
With fresh strawberries, remove the green hull and halve the fruit if the berries are very large. Cut away any soft or bruised spots generously. One bad strawberry can spoil the whole shake.
45 seconds on speed 8, no longer
Speed 8 is the sweet spot: fast enough to break down the ice cream and strawberries completely, but not as fast as speed 10, where the shake draws in too much air and turns foamy rather than creamy. After 45 seconds the mixture is smooth and uniform. Blending for longer will warm the shake through friction heat from the blades.
If you can still see strawberry pieces (this can happen with very large frozen chunks), add another 10 seconds rather than running it for 60 seconds from the start. That way the temperature stays low.
Serving and taking it on the go
Drink it straight after blending. A milkshake made with vanilla ice cream turns thin after about 10 minutes as the ice cream melts. Pour into milkshake glasses and serve with straws. If you want to portion it out, an ice cream scoop works well for even portions.
To take it on the go, pour the shake into a glass bottle and store it in the fridge. Drink within two hours, as the mixture will separate after that.
Chocolate, banana, no ice cream: three quick variations
Chocolate strawberry: Add 2 tbsp unsweetened cocoa powder to the mixing bowl along with the other ingredients. The cocoa combines with the strawberry to create a flavour reminiscent of chocolate-dipped strawberries from a Christmas market.
Banana strawberry: Replace 150 g of the strawberries with 1 ripe banana. The banana makes the shake even thicker and naturally sweet. Leave out the sugar in this case.
Without ice cream (lighter version): Use 200 g of plain yoghurt instead of 350 g of vanilla ice cream and increase the milk to 400 g. The shake will be noticeably thinner but also lower in calories. Great for children or when there is no ice cream in the house.

Can I use lactose-free milk?
Yes. Lactose-free milk behaves identically to regular milk in the Thermomix®. Oat milk or almond milk also work. The shake will turn out slightly thinner, as plant-based milks contain less fat.
How many servings does the recipe make?
The 300 g strawberries, 350 g vanilla ice cream and 350 g milk make roughly 900 ml of milkshake. That is enough for two large glasses or three smaller portions.
Can I prepare the shake in advance?
Not recommended. Because of the vanilla ice cream, the mixture melts quickly and turns watery. If you want to get ahead, portion the strawberries into the freezer and weigh out the remaining ingredients. The shake then only takes 2 minutes to blend when you are ready.
