Yeast-Free Pan Pizza with the Thermomix®

- 200 g Gouda
- 400 g flour, type 550
- 200 g water
- 3/4 tsp salt
- 1 onion
- 1 garlic clove
- 20 g olive oil plus a little extra to grease the pan
- 2 red peppers
- 150 g tomatoes
- 50 g tomato puree
- 1 tsp salt
- 2 tsp dried Italian herbs
- 1 tsp pepper
- 100 g salami
- 50 g black olives (pitted)

Add the Gouda in pieces to the mixing bowl, grate for 5 seconds / speed 6 and set aside.

Add the flour, water and salt to the mixing bowl and knead for 5 minutes / kneading mode.

Shape the dough into two balls and set aside.

Peel the garlic, peel and halve the onion, place both in the mixing bowl, chop for 5 seconds / speed 5 and scrape down with the spatula.

Add the oil and steam for 3 minutes / Varoma / speed 1.

Meanwhile, wash the peppers, remove the seeds and stalks, and wash the tomatoes and remove the stalks. Add in pieces to the mixing bowl.

Add the tomato puree, salt, herbs and pepper to the mixing bowl, chop for 6 seconds / speed 5 and steam for 3 minutes / Varoma / speed 1.

Meanwhile, halve the dough, roll each half into a round and place in the pan greased with olive oil. Press the edges up slightly.

Meanwhile, preheat the oven to 220°C top and bottom heat.

Spread half of the pizza sauce evenly over the dough, top with half of the salami and olives, then scatter over half of the cheese.

Fry on the hob over a medium heat for 5 minutes.

Transfer the pan with the pizza to the upper third of the oven and bake for approximately 5 to 10 minutes, depending on how golden you like it.

Repeat the same process with the second half of the dough.
Tip: You can vary the toppings however you like. Ham, mushrooms and pepperoni work really well too.
