Buying and storage
Choose sweetcorn that look fresh, firm and free from bruises or tired edges. Smaller produce is often sweeter and cooks more evenly. Store vegetables cool and dry, or in the fridge drawer when they are tender or leafy. Use the freshest pieces first and keep any trimmings for stock when they are clean and aromatic.
Preparing sweetcorn in the Thermomix®
The Thermomix® is useful for chopping, steaming, blending and stirring seasonal produce with consistent timing. For firm vegetables, cut into even pieces before adding them to the mixing bowl. For soups and sauces, start with onion or garlic, chop 3 sec / speed 5, saute briefly, then cook with stock before blending smooth. For delicate fruit, use shorter mixing times so the texture stays fresh.
