Apple crisps from the air fryer are ready in 15 to 20 minutes and taste nothing like a packet. We slice the apples paper-thin in the Thermomix®, which is faster and more even than using a knife, sprinkle them with cinnamon and sugar, and let the air fryer do the work at 150 °C. That way you always have fresh crisps to hand, no oil and no additives.

  • 3 medium apples approx. 450 g, e.g. Elstar, Boskoop or Jonagold
  • 1 tsp ground cinnamon
  • 1 tbsp raw cane sugar optional, or soft brown sugar
  • 1 splash lemon juice prevents browning

    Prepare the apples.

    Wash the apples and remove the cores with an apple corer. Do not peel them; the skin holds the thin slices together.

    Slicing in the Thermomix®.

    Insert the slicing attachment with the 1 mm disc into the mixing bowl. Push the apples through the feed tube and slice evenly at speed 5 in approx. 30 to 40 seconds. No slicing attachment? Use a mandoline set to 1 to 2 mm.

    Season.

    Toss the apple slices in a large bowl with a splash of lemon juice, cinnamon and sugar. Distribute evenly, then leave to rest for 5 minutes. The sugar dissolves and the slices become slightly moist, which helps them caramelise evenly.

    Crisp in the air fryer.

    Arrange the apple slices in a single layer in the basket, no overlapping. Dry and crisp at 150 °C for 15 to 20 minutes. Check every 5 minutes and turn the slices. Remove as soon as the edges are golden. The crisps will firm up a little more as they cool.

    Cool down.

    Leave the crisps to cool completely on a wire rack, not stacked on top of each other. Only then will they be properly crispy.

How to get perfect apple crisps in the air fryer

The thickness of the apple slices is everything. Too thick and the crisps stay soft. Too thin and they burn before they turn crispy. With the Thermomix® and the slicing attachment (1 mm disc) we get even slices in under a minute. No slicing attachment? Use a mandoline set to 1 to 2 mm. Coring the apples with an apple corer before slicing saves a lot of effort. Then sprinkle over the cinnamon and sugar and into the air fryer they go, at 150 °C with a single layer of apple slices per batch. After just 15 to 20 minutes we have our own fresh apple crisps.

Our tips

  • Apple variety: Sharper apples (Boskoop, Elstar) give more flavour. Sweeter varieties like Gala or Fuji caramelise more, a good choice for children.
  • Skip the sugar: Apple crisps without sugar are sweet enough on their own, especially with ripe apples. Just use cinnamon.
  • Multiple batches: Only a single layer fits in the basket per batch. Three apples usually make 2 to 3 batches. Leave the finished first batch to cool on a wire rack while the next one runs.
  • Storage: Store completely cooled crisps in an airtight tin, crispy for 3 to 4 days. Not in cling film or plastic bags, or they will go soft.
