Air fryer Brussels sprouts are the best argument against anyone who says they do not like Brussels sprouts. The outer leaves turn crispy like crisps, the centre stays tender, and the typical sulphur smell that develops during steaming or boiling is almost completely absent. We halve the sprouts and toss them directly in the Thermomix® with the spiced oil.

  • 500 g Brussels sprouts fresh, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp balsamic vinegar to serve, optional

    Prepare the Brussels sprouts.

    Brussels sprouts: wash, remove any wilted outer leaves and trim the stem end. Halve each sprout lengthways.

    Mix the spiced oil and coat the sprouts.

    Place olive oil, garlic powder, smoked paprika, salt and pepper into the Thermomix®. Mix for 10 sec / speed 3. Add the halved sprouts and stir for 15 sec / speed 2 / reverse direction until all halves are evenly coated in the spiced oil.

    Preheat the air fryer.

    Preheat the air fryer to 180°C for approximately 3 minutes.

    Roast the Brussels sprouts.

    Place the sprout halves cut side down in the basket, in a single layer as much as possible. Cook for 12 to 15 minutes at 180°C. After 7 minutes, give the basket a shake. The cut sides should be golden brown to slightly charred by the end.

    Serve.

    Remove the Brussels sprouts from the basket and serve with a splash of balsamic vinegar if you like.

How to get perfect Brussels sprouts in the air fryer

Halving is the key step. The cut side sits directly on the hot rack and caramelises, while the rounded sides are hit by the circulating hot air. We cook at 180°C for 12 to 15 minutes, depending on the size of the sprouts, and give them one shake. If your sprouts are over 3 cm in diameter, go for the full 15 minutes.

Our tips

  • Fresh beats frozen: Frozen Brussels sprouts contain too much water and will steam rather than roast. Fresh sprouts are essential for this result.
  • Make the most of crispy outer leaves: If you want plenty of crispy outer leaves, peel a few off during prep and place them separately in the basket. They will be ready after 8 to 10 minutes and make a great snack while you wait.
  • Add bacon or Parmesan: For a heartier variation, add 50 g of finely diced bacon for the last 5 minutes of cooking. Or scatter freshly grated Parmesan over the hot sprouts as soon as they come out of the basket.
  • Combine with other vegetables: Brussels sprouts roast well alongside carrot wedges or halved shallots. Simply set the time to 15 minutes and place all the vegetables in the basket at the same time.
