Oven gyros with the Thermomix® made from 500 g turkey strips, Greek spices and a sauce of feta cheese, herb cream cheese and double cream. Garlic and onion are chopped in the mixing bowl, the marinade is mixed together, the meat is left to marinate for 1 hour, then baked for 55 minutes in the oven at 200°C. Serves 4.

Goes well with: Tzatziki and pitta bread.

  • 500 g turkey strips (sliced turkey breast)
  • 2 garlic cloves
  • 1 onion
  • 30 g olive oil
  • 1/2 tsp dried coriander
  • 1/2 tsp cumin
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1 tsp dried marjoram
  • 1 tsp sweet paprika
  • 1 pinch ground cinnamon
  • 1 green pepper
  • 200 g mushrooms
  • 1 Roma tomato
  • 200 g feta cheese
  • 150 g herb cream cheese
  • 150 g double cream
  • 1/2 tsp salt
  • 1/2 tsp white pepper

    Prepare the meat.

    Rinse the turkey strips, pat dry and place in a bowl.

    Chop the garlic.

    Peel the garlic, place in the mixing bowl and chop for 3 sec / speed 8. Set aside half of it.

    Chop the onion.

    Peel the onion, place in the mixing bowl and chop for 3 sec / speed 5. Scrape down with the spatula.

    Add the spices.

    Add the oil, coriander, cumin, thyme, salt, marjoram, paprika and cinnamon and mix for 4 sec / speed 3.

    Marinate the meat.

    Pour the contents of the mixing bowl over the meat, combine well and leave to marinate in the fridge, covered, for 1 hour.

    Bake the oven gyros.

    Preheat the oven to 200°C (180°C fan, gas mark 4). Place the meat in a roasting dish and bake on the middle shelf for 30 minutes.

    Prepare the vegetables.

    Meanwhile, wash, deseed and slice the pepper into strips. Wash, clean and slice the mushrooms. Wash and slice the tomato. Cut the feta cheese into cubes.

    Make the sauce.

    Place the cream cheese, double cream, salt, pepper and the reserved garlic in the mixing bowl and mix for 5 sec / speed 3.

    Finish baking and serve.

    Remove the meat from the oven, stir in the pepper, mushrooms and feta cheese, arrange the tomato slices on top and pour over the contents of the mixing bowl. Bake for a further 25 minutes on the middle shelf.

Tip: Fresh flatbread and a Thermomix® salad go really well alongside.

Garlic, onion and 6 spices: the marinade in the mixing bowl

Place 2 garlic cloves in the mixing bowl and chop for 3 seconds at speed 8. Set half aside (we need it later for the sauce). Add 1 onion and chop for 3 seconds at speed 5. Then add 30 g olive oil, 1/2 tsp coriander, 1/2 tsp cumin, 1 tsp thyme, 1 tsp marjoram, 1 tsp paprika, 1/2 tsp salt and 1 pinch of cinnamon. Mix for 4 seconds at speed 3. If you want to keep it simple, a ready-made gyros spice blend works well too. Or we can mix our own gyros spice blend in the Thermomix®.

1 hour to marinate: why the meat needs time

Pour the spice mixture over the 500 g turkey strips, mix well and leave to marinate in the fridge, covered, for at least 1 hour. Overnight is even better. The longer the meat marinates, the more intense the flavour. Cumin and coriander need time to penetrate the meat.

30 minutes at 200°C, then add vegetables and cheese sauce

Preheat the oven to 200°C (180°C fan). Place the marinated meat in a roasting dish and bake on the middle shelf for 30 minutes. Meanwhile, slice 1 green pepper into strips, slice 200 g mushrooms, slice 1 Roma tomato and cut 200 g feta cheese into cubes.

For the sauce: place 150 g herb cream cheese, 150 g double cream, 1/2 tsp salt, 1/2 tsp white pepper and the reserved garlic in the mixing bowl. Mix for 5 seconds at speed 3.

Remove the meat from the oven, stir in the pepper, mushrooms and feta cheese, arrange the tomato slices on top and pour over the sauce. Bake for a further 25 minutes on the middle shelf, until the cheese has melted and the surface is lightly golden.

Thermomix® Oven Gyros Recipe

Chicken, pork or vegan: 3 variations

  • Chicken or pork: Replace the turkey strips 1:1 with chicken breast strips or pork gyros. Cooking times stay the same.
  • Different vegetables: Courgette, aubergine or mixed peppers instead of green pepper and mushrooms.
  • Spicier: Add 1 red chilli to the marinade.

Flatbread and gyros salad: what to serve alongside

Best served with fresh flatbread from the Thermomix®. A gyros salad, coleslaw, mixed raw vegetable salad or a simple green salad all go well alongside. It also works nicely as part of a buffet together with gyros soup or other Thermomix® bakes.

2 days in the fridge, up to 3 months in the freezer

Covered in the fridge, the oven gyros keeps for 2 days. To reheat, warm in the oven at 160°C until piping hot throughout. To freeze: leave to cool, portion into freezer bags and freeze for up to 3 months. Defrost overnight in the fridge, then reheat in the oven.
