Air fryer roasted cauliflower beats oven-roasted every time: the florets get proper char marks, stay tender inside, and are done in under 30 minutes. We use the Thermomix® to cut the head into evenly sized florets and mix the spiced oil in seconds.
Roasted Cauliflower with the Thermomix® and Air Fryer

- 700 g cauliflower 1 medium head, trimmed
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp turmeric
- ½ tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- ½ piece lemon juice only

Chop the cauliflower.
Wash the cauliflower and remove the core. Cut the head into chunks and place in the Thermomix®. Chop for 3 sec / speed 4 until you have even florets of about 3 to 4 cm. Remove the florets and pat dry thoroughly with kitchen paper.

Mix the spiced oil and coat the florets.
Add olive oil, cumin, turmeric, garlic powder, salt and pepper to the Thermomix®. Mix for 10 sec / speed 3. Return the cauliflower florets to the bowl and toss for 10 sec / speed 2 / reverse direction until all florets are evenly coated in the spiced oil.

Preheat the air fryer.
Preheat the air fryer to 180°C for about 3 minutes.

Roast the cauliflower.
Arrange the florets in a single layer in the basket. Cook for 15 minutes at 180°C. After 7 to 8 minutes, give the basket a firm shake so all the florets brown evenly.

Serve.
The florets are ready when the tips have dark brown char marks and the inside is tender. Drizzle with lemon juice and serve straight away.
How to get perfectly roasted cauliflower in the air fryer
The most important step is drying the florets after washing. Any moisture on the surface creates steam instead of browning. We pat the cauliflower dry, toss it with the oil in the Thermomix® bowl, and only then transfer it to the air fryer. 180°C for 15 minutes with one shake halfway through gives evenly browned florets with crispy tips.
Our tips
- Keep the florets a consistent size: Different sizes mean smaller pieces burn before larger ones are cooked through. If you break them by hand, take the time to get everything to about 3 cm.
- Variation with tahini dip: Blend 2 tbsp tahini, 1 tbsp lemon juice and 2 tbsp water in the Thermomix® for 10 seconds at speed 4 to make a smooth dip. It pairs brilliantly with the smoky roasted flavour of the cauliflower.
- As a classic side dish: Swap the cumin and turmeric for 1 tsp sweet smoked paprika and 1 tsp dried thyme. The cauliflower then works just as well alongside a roast and potatoes.
- Seasonal note: Cauliflower is at its best from June to November. At that time it is not only better value but also firmer and more flavourful, which gives the florets an even better result.
