Blue Ice Lollies with the Thermomix®

- 2 tsp vanilla sugar
- 500 g water
- 70 g lychee syrup
- 70 g Blue Curacao syrup

Pulverise the sugar.
Add the sugar to the mixing bowl and pulverise for 10 sec / speed 10.

Blend the ingredients.
Add the water and syrups and blend for 20 sec / speed 10.

Freeze.
Pour the mixture into ice lolly bags or ice lolly moulds, seal well and freeze.
Tip: Fill your ice lolly moulds only halfway with the blue mixture. Once it has partially frozen, top up with cherry ice lolly mixture and leave to freeze completely. The result is a two-tone ice lolly.

Why Blue Curacao syrup and not food colouring
Anyone making blue ice lollies for the first time often reaches for food colouring. The problem: the colour works, but the flavour stays neutral. Blue Curacao syrup solves both at once. It is alcohol-free, colours intensely blue and brings a light bitter-orange note. Together with the lychee syrup, a tropical sweetness with depth develops. We use both syrups in equal parts so that neither overpowers the other. Anyone who wants a stronger citrus accent can increase the Curacao portion slightly and reduce the lychee portion accordingly, keeping the total quantity the same.
The lychee-Curacao effect: two-tone instead of one-tone
Hidden in the recipe notes is a simple idea that many people overlook: fill the moulds halfway with the blue mixture, leave to partially freeze, then top up with cherry ice lolly mixture. The result is two-tone, red and blue, without needing to make two separate batches. If you only want the blue version, simply fill the moulds completely and you are done.
For freezing you will need either ice lolly bags or ice lolly moulds. If you freeze the mixture in an ice cream maker instead of a mould, you get a slush. No less blue, but quite different in texture.
Storage and quantities
The ice lollies keep well in the freezer for up to four weeks. Sealed airtight, you avoid freezer burn. Anyone who wants to make more than 7 pieces at a time can simply double the quantity. The Thermomix® handles this without any adjustment on all models.
