Buying and storing cauliflower
When buying, look for a compact, white to cream-coloured head that is firm and free of brown spots or florets that have started to open up. The outer leaves should be green and taut, not wilted or yellow. Varieties such as Romanesco (green, with pointed florets) are an alternative with a nutty aroma. Avoid: heads with black spots (fungal attack) or florets that are already coming away from each other.
Cauliflower keeps in the fridge for up to a week, with the outer leaves acting as natural protection. To freeze, break into florets, blanch for 3 minutes, refresh and freeze dry. Frozen cauliflower keeps for up to 12 months and works well in soups and cauliflower rice.
Preparing cauliflower in the Thermomix®
For cauliflower rice, break the head into rough pieces and process it in the Thermomix® at 5 seconds, speed 5 into rice-sized crumbs. Use the result raw straight away or toss it briefly in a pan. For cauliflower soup, cook the florets with stock at 100°C on speed 1 until tender, then blend for 10 seconds on speed 10.
Steam whole or halved cauliflower in the Varoma: place the florets or the half head on the Varoma tray and cook for about 20 to 25 minutes at Varoma temperature. This way it stays firm to the bite and loses hardly any nutrients. For Cauliflower Bake and Cauliflower Gratin, carry on with the steamed florets.
The most common mistakes with cauliflower
- Overcooked and mushy. Cauliflower cooks quickly. Leave it too long in boiling water and you get mush instead of bite. Better: steam it in the Varoma and check after 20 minutes. The florets should give slightly when pierced, not fall apart.
- An unpleasant cooking smell in the house. Brassicas develop sulphur compounds when cooked. Short cooking times and steaming instead of boiling in lots of water cut the smell considerably. A bay leaf in the cooking water helps too.
- Cauliflower turns yellow or grey. Boiling it directly without any protection oxidises the surface. Adding a little lemon juice to the cooking water, or processing it in the Thermomix® straight after cutting, keeps the white colour.

How do I make cauliflower rice in the Thermomix®?
Break the cauliflower into rough pieces and chop for 5 seconds on speed 5. That gives even, rice-sized grains. Then use it raw or toast it briefly in a dry pan so the excess moisture escapes.
Can you eat cauliflower raw?
Yes. Raw florets have a pleasantly nutty taste and are crunchy. They go well in raw vegetable salads or as a snack with a dip. The key point: the cauliflower must be fresh and blemish-free, and always cut away any brown spots.
How long does cauliflower keep in the fridge?
A whole, uncut head with its leaves keeps in the fridge for 5 to 7 days. Once broken into florets, the shelf life drops to 3 to 4 days. Store it in cling film or in a container.
What varieties of cauliflower are there?
The most common variety is cream-white. Romanesco has green, spiralling pointed florets and a slightly nutty taste. Rarer are purple and orange cauliflower, which partly lose their colour when cooked.
