Buying and storing red cabbage
Red cabbage and blue cabbage are the same vegetable: the colour shifts from red to blue-violet depending on the pH when it is cooked. When shopping, look for firm, heavy heads with deep purple to red leaves. The stalk should be white and fresh. Smaller heads up to 1.5 kg are more tender. Older cabbage shows soft outer leaves and a greyish tinge.
Red cabbage is one of the best-keeping vegetables there is: whole heads last 3 to 4 months in a cool, dark, well-ventilated place. In the fridge, once cut and tightly wrapped in film, 2 to 3 weeks. Blanched strips can be frozen for up to 12 months. Finished braised red cabbage with apple keeps easily for 5 days in the fridge and tastes better reheated than fresh.
Preparing red cabbage in the Thermomix®
We chop red cabbage in the Thermomix® for raw salads and braised cabbage: quarter the cabbage, remove the stalk and break it into rough pieces of about 5 cm. Chop for 4 to 5 seconds on speed 5, stopping briefly to check. For the Red Cabbage and Pear Salad or a classic red cabbage salad, this texture is right. If you like it finer, run it 1 to 2 seconds longer.
For braised red cabbage with apple, put the chopped cabbage in the mixing bowl with apple pieces, spices and a little vinegar and braise at 100°C on speed 1 for about 30 to 40 minutes, until the cabbage is soft. A splash of red wine or cider vinegar keeps the red colour. Without acid, the cabbage turns blue-grey as it cooks.
The most common mistakes with red cabbage
- Red cabbage turns blue-grey. The red pigment anthocyanin reacts to acid and base. Without acid, red cabbage turns blue-violet to grey as it cooks. Always cook it with a little cider vinegar, red wine or lemon juice, which keeps the red colour.
- Red cabbage does not turn soft when braising. Red cabbage needs enough cooking time and liquid. Too little liquid or too short a cooking time leaves it tough. In the Thermomix® cook it for at least 30 minutes at 100°C, and top up with a little stock if needed.
- Raw salad too fine and mushy. Red cabbage chops very fast in the Thermomix®. For a raw salad, do not run it longer than 5 seconds on speed 5. Break the cabbage into evenly sized pieces first so everything chops evenly.

Why is red cabbage sometimes called blue cabbage?
The anthocyanin pigment in the cabbage changes colour depending on the acidity. In an acidic environment it stays red, in a neutral or alkaline one it turns blue-violet. In some regions the vegetable is traditionally called blue cabbage for this reason, in others red cabbage.
How do I make braised red cabbage with apple in the Thermomix®?
Break the red cabbage into rough pieces and chop for 5 seconds on speed 5. Put it in the mixing bowl with apple pieces, cloves, bay, a little sugar and a splash of cider vinegar, and braise at 100°C on speed 1 for about 35 to 40 minutes. Taste and adjust the seasoning at the end.
Can you eat red cabbage raw?
Yes. Raw, red cabbage is firm, slightly bitter and rich in vitamin C. Chop it in the Thermomix® and marinate it in a dressing of vinegar, oil and a little sugar. Important: let a raw salad stand for at least 30 minutes so the cabbage softens.
How long does braised red cabbage keep?
In a sealed container in the fridge, 4 to 5 days. Braised red cabbage often tastes even better the next day, because the spices have time to work through. You can freeze it in portions, and then it keeps for up to 6 months.
