When are peas in season?
Fresh peas outdoors from June to August, frozen peas available all year round.
Outdoor crop: fresh European harvest. Protected crop: greenhouse or covered cultivation. Stored: European harvest kept in storage.
Buying and storing peas
Fresh pea pods should be taut, deep green and free of yellow patches. When you break one open, the peas inside should look plump and juicy. Pod varieties such as mangetout and sugar snap peas are eaten pod and all and need no worry about phasin, as they are picked very young. Frozen peas are a first-rate alternative: flash-frozen right after harvest, they often hold more vitamins than fresh peas that have been in transit for days.
Use fresh peas on the day you buy them if you can, because the sugar quickly turns to starch. Unshelled, they keep in the fridge for 1 to 2 days. For longer storage: pod them, blanch for 2 minutes, refresh in iced water and freeze in portions. Frozen peas keep for up to 12 months.
Preparing peas in the Thermomix®
We prepare peas several ways in the Thermomix®. For a creamy Pea Purée (as a side, for example), thawed or briefly blanched peas are cooked until just soft at 100°C on speed 1, then we blend them on speed 10 with butter, salt and a little stock to the consistency we want. Mangetout we steam in the Varoma at Varoma temperature for 8 to 10 minutes, which keeps their colour and bite.
For a Pea Soup, onions and garlic are chopped and sweated first, then the peas go in, we pour in stock and cook everything at 100°C until soft. After that we blend on speed 10 for a velvety soup.
The most common mistakes with peas
- Leaving fresh peas to sit too long. After harvest peas rapidly convert sugar into starch. What was sweet in the morning is floury by the evening. Use fresh peas on the day you buy them, or freeze them straight after shelling.
- Thawing frozen peas instead of using them straight away. For soups and purées, frozen peas do not need thawing. Tip them straight into the hot mixing bowl. Blended on speed 10 they break down completely anyway. Thawing washes out flavour and colour.
- Confusing mangetout with dried pulses. Mangetout is eaten young, pod and all, and contains hardly any phasin. Fully mature dried pulses (kidney beans, white beans) must be cooked thoroughly. Fresh garden beans fall under the bean rule too: always cook them through completely.

Good to know
Are frozen peas just as healthy as fresh?
Yes, often even healthier. Frozen peas are blanched and flash-frozen right after harvest, which preserves vitamins and minerals well. Fresh peas from the supermarket, by contrast, often sit in the cold chain for days and lose nutrients along the way.
How long do fresh peas need to cook?
Fresh podded peas need only 5 to 8 minutes at 100°C. Mangetout in the Varoma takes just 8 to 10 minutes. They should stay firm to the bite and keep their bright green colour. Overcooking turns them grey and floury.
What are sugar snap peas and how do they differ from mangetout?
Sugar snap peas have plumper pods with slightly more developed peas inside. Mangetout is flatter and picked earlier. Both are eaten pod and all, both need only a short cooking time and both work well in salads and steamed in the Varoma.
Can I use tinned peas for pea purée?
Yes, they are pre-cooked and work well for a quick pea purée. Drain them, tip the peas into the Thermomix® and blend on speed 10 with a little butter and stock. The flavour is a touch flatter than with fresh or frozen peas, but for quick meals they do the job nicely.
