  • 2 eggs
  • 120 g sugar
  • 1 sachet vanilla sugar
  • 250 g plain flour (type 405)
  • 250 g milk
  • 1/2 tsp baking powder
  • 1 pinch salt

    Mix the ingredients.

    Preheat the waffle iron. Cut the butter into pieces, add to the mixing bowl together with the eggs, sugar and vanilla sugar, and stir together for 40 sec / speed 5.

    Cook the waffles.

    Pour the batter into a bowl and cook in the waffle iron in batches. Serve the waffles immediately.

Tip: Dust your waffles with icing sugar. Drizzle with maple syrup or melted chocolate.

40 seconds at speed 5: first butter and eggs, then flour and milk

Preheat the waffle iron. Cut 130 g softened butter into pieces and add to the mixing bowl along with 2 eggs, 120 g sugar and 1 sachet of vanilla sugar. Stir together for 40 seconds at speed 5. Then add 250 g plain flour (type 405), 250 g milk, 1/2 tsp baking powder and 1 pinch of salt and stir for another 15 seconds at speed 5. Using a real vanilla pod instead of vanilla sugar gives a more intense flavour. Homemade vanilla paste works just as well.

Softened butter and a hot iron: the 2 most common mistakes

The butter must be softened, not melted. Melted butter makes the batter too thin and the waffles turn out flat rather than fluffy. Take it out of the fridge at least 30 minutes beforehand. The waffle iron must be hot before the batter goes in, otherwise the waffles will stick. Each waffle needs 3 to 4 minutes in the iron. If the waffles turn out too dry, add a little more milk to the batter and give it another quick mix in the Thermomix®.

Chocolate, apple and cinnamon, coconut: 5 variations for the batter

  • Chocolate waffles: Add 2 tbsp cocoa powder to the batter. Fold in chocolate chips if you like.
  • Banana and walnut waffles: Mash a ripe banana and stir it into the batter along with some chopped walnuts. Use a little less sugar.
  • Apple and cinnamon waffles: Finely grate an apple and stir it into the batter with a pinch of cinnamon.
  • Coconut waffles: Replace some of the milk with coconut milk and fold in desiccated coconut.
  • Sugar-free waffles: Replace the sugar with coconut blossom sugar or erythritol.

Icing sugar, berry compote, vanilla ice cream: what to put on your waffles

Waffles taste best warm, dusted with icing sugar or poppy seed sugar. Maple syrup works just as well. As a topping we recommend red berry compote, vanilla sauce, caramel cream, advocaat or strawberry jam made in the Thermomix®. For a classic Sunday brunch: waffles with vanilla ice cream and fresh berries. Homemade chocolate hazelnut spread or fruit jam are great alongside them too.

Fine Thermomix® waffles

5 days in the fridge, freeze in freezer bags

Freshly baked waffles keep for 5 days in the fridge in an airtight container. To reheat, place them in the oven at 160 C for a few minutes and they will taste almost freshly made. Freezing works too: place waffles individually into freezer bags and reheat straight from frozen in the oven. If you want to make waffles in larger batches, a good mixing bowl set and a batter spatula for transferring the batter will come in handy. For maple syrup and honey, a good honey dispenser is very practical.

Pancakes with the Thermomix® can also be made in advance and frozen the same way.
