Roasted chickpeas from the air fryer are ready in 15 minutes, crispy like nuts and keep for three days in an airtight container. We mix the spiced oil in the Thermomix® and coat the chickpeas in it before they go into the air fryer.
Crispy Roasted Chickpeas with the Thermomix® and Air Fryer

- 480 g chickpeas 2 tins, approx. 400 g each, drained
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp sweet smoked paprika
- ½ tsp garlic powder
- ½ tsp cayenne pepper or less, to taste
- 1 tsp salt

Dry the chickpeas.
Drain the chickpeas into a sieve, rinse with cold water and leave to drain thoroughly. Spread them on kitchen paper and pat dry with additional layers of paper. The drier they are, the crispier the result.

Mix the spiced oil and coat the chickpeas.
Place olive oil, cumin, paprika, garlic powder, cayenne pepper and salt into the Thermomix®. Stir together for 10 sec / speed 3. Add the chickpeas and toss for 15 sec / speed 2 / reverse direction until they are all evenly coated in the spiced oil.

Preheat the air fryer.
Preheat the air fryer to 190 °C for approximately 3 minutes.

Roast the chickpeas.
Spread the chickpeas in as even a layer as possible in the basket. Cook for 12 to 15 minutes at 190 °C. After 6 to 7 minutes, give the basket a good shake.

Cool and serve.
They are done when the chickpeas are golden brown and sound crispy when pressed. Remove from the basket and leave to cool on a plate. They will firm up a little more as they cool.
How to get perfectly crispy chickpeas in the air fryer
The most common mistake is damp starting material. Tinned chickpeas must be completely dry before they go into the air fryer. We drain and pat them thoroughly with kitchen paper, rolling them back and forth briefly so the inside dries out too. Then 190 °C, 12 to 15 minutes, one shake at halftime. The result: golden brown, crispy chickpeas.
Our tips
- Drying is everything: If you have an hour to spare, spread the drained chickpeas on a sheet of baking paper and leave them to air-dry before seasoning. This gives the crispiest result of all.
- Seasoning variations to suit your taste: Instead of the Middle Eastern blend, 1 tsp curry powder and ½ tsp ground ginger works well, or 1 tsp cinnamon and 1 tbsp maple syrup for a sweet snack version. Add the syrup in the air fryer rather than during mixing, otherwise it will burn.
- As a salad topping: We scatter roasted chickpeas over leafy salads instead of croutons. The quantity makes enough for 4 servings as a topping.
- Storage: Kept in an open bowl rather than a sealed container, they stay crispy for longer. After a day in a container they soften slightly, which can be fixed by 3 minutes at 180 °C in the air fryer.
