We all know cheese spaetzle from the pot, but as crispy fritters from the air fryer they are a whole new experience. We make the batter in the Thermomix®, fold in the cheese, and bake the fritters at 180°C for 10 to 12 minutes until golden. Crispy on the outside, soft and cheesy on the inside.

  • 200 g plain flour Type 405
  • 3 piece eggs medium
  • 80 ml water lukewarm
  • 1 tsp salt
  • 1 pinch nutmeg freshly grated
  • 100 g mountain cheese (Bergkäse) in a block, or Emmental
  • oil or cooking spray for the air fryer basket

    Grate the cheese.

    Break the mountain cheese into pieces and place in the mixing bowl. Grate for 10 sec / speed 10. Transfer the cheese to a bowl and set aside.

    Blend the spaetzle batter.

    Add the flour, eggs, water, salt and nutmeg to the mixing bowl. Blend for 30 sec / speed 5. The batter should be thick and bubbly. If needed, blend for a further 10 sec / speed 5.

    Fold in the cheese and rest.

    Using a spatula, fold the grated mountain cheese into the batter by hand (do not do this in the Thermomix®, as the cheese will form strings around the measuring cup). Leave to rest for 5 minutes so the batter thickens slightly.

    Cook the fritters.

    Preheat the air fryer to 180°C and lightly oil the basket or spray with cooking spray. Drop 1 heaped tablespoon of batter per fritter into the basket and press flat to about 1 cm thick with the back of the spoon. Do not overcrowd the basket. Cook for 10 to 12 min / 180°C, turning once after 6 minutes. The fritters are ready when they are golden brown and crispy at the edges.

How to get perfect cheese spaetzle fritters in the air fryer

The key is the batter: it needs to be thick enough that the fritters hold their shape in the air fryer. In the Thermomix® we blend a classic spaetzle batter from flour, eggs, salt and a splash of water at speed 5 for 30 seconds until it bubbles. Then we add grated mountain cheese, which the Thermomix® chops at speed 10 for 10 seconds. We portion the batter with a tablespoon straight into the greased air fryer basket, press it flat, and the machine does the rest.

Our tips

  • Rest the batter: The 5-minute resting time after folding in the cheese matters. The batter thickens a little and the fritters hold together better.
  • Cheese choice: Mountain cheese gives a strong flavour, Emmental is milder. You can mix both half and half. Freshly grated cheese binds far better than ready-grated cheese from a packet.
  • Serve with: A dollop of soured cream with chives or a simple green salad. For extra flavour, sprinkle dried thyme over the raw batter before cooking.
  • Portion size: This quantity makes 10 to 12 fritters. For a larger crowd, simply double the batter and cook in two batches.
  • Reheating: Reheat cooled fritters in the air fryer at 160°C for 4 to 5 minutes to crisp them back up. This works far better than the microwave.
