  • 1 piece broccoli approx. 700 g, trimmed
  • 3 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp Parmesan freshly grated, approx. 20 g
  • 1 pinch pepper
  • 1 piece garlic clove pressed, optional

    Chop the broccoli in the Thermomix®.

    Break the trimmed broccoli into rough pieces and place in the mixing bowl. Chop for 2 to 3 seconds / speed 4, then briefly press the Turbo button. We want evenly sized florets of about 3 to 4 cm, not fine crumbs. Remove the broccoli from the mixing bowl and transfer to a large bowl.

    Season.

    Add olive oil, salt, pepper and Parmesan to the florets and combine well. If you like garlic, add a pressed garlic clove now, until all the florets are evenly coated.

    Roast in the air fryer.

    Place the seasoned florets in the frying basket, in a single layer if possible. Cook at 180°C, shaking the basket once vigorously after about 7 minutes. Total cooking time: 12 minutes for smaller florets, 15 minutes for larger ones. The broccoli is ready when the tips are golden brown and lightly crisp.

How to get flavourful broccoli from the air fryer

The Thermomix® handles the prep work: We chop the broccoli in just a few seconds at speed 4 to 5, with a quick burst on Turbo, into evenly sized florets. Then we add 3 tablespoons of olive oil, a generous teaspoon of salt and 2 tablespoons of freshly grated Parmesan and toss everything together. The florets are evenly coated without any lengthy mixing by hand.

The prepared florets go into the air fryer at 180°C. After 6 to 7 minutes we give the basket a good shake. In total, the broccoli needs 12 to 15 minutes until the tips are golden brown and lightly crisp. If the florets were cut thicker, go for the full 15 minutes.

Our tips

  • Cut the florets to a consistent size. If the pieces vary a great deal, the smaller ones cook too quickly while the larger ones stay firm in the middle. We make sure the florets are roughly 3 to 4 cm after chopping in the Thermomix®.
  • Do not overfill. A 4-litre basket comfortably holds 500 to 600 g of florets. If you want to roast more, do it in two batches. Florets stacked on top of each other will steam rather than roast and will not turn crispy.
  • Add Parmesan halfway through if it browns quickly. If your Parmesan is prone to burning, scatter it over the florets after the first shake. It will not burn and still forms a lovely crust.
