Hot Milk with Advocaat is our go-to winter drink. The moment temperatures drop below zero, the Thermomix® is ready: hot milk, advocaat, frothed up, a pinch of cocoa on top. Done in 5 minutes, and it warms you up better than any mulled wine.
The name sounds playful, but the drink is the real deal: hot milk with vanilla sugar, advocaat, and foam. Not too sweet, not too strong, just right for a winter evening on the sofa. Children love the alcohol-free version (simply leave out the advocaat and add a little extra vanilla sugar).

Heat the milk.
Add milk and vanilla sugar to the mixing bowl and heat for 5 minutes / 90°C / speed 2.

Add the advocaat.
Add the advocaat and froth by gradually increasing the speed over 25 seconds / speed 6 to 8.

Serve.
Pour the Hot Milk with Advocaat into glasses or cups and serve decorated with cocoa powder.

The milk is heated to 90°C, not boiled. At 100°C, milk boils over and the protein changes. At 90°C the milk is hot enough for the advocaat, but it does not boil over and does not taste scorched. 5 minutes at 90°C, speed 2. That simple.
The advocaat goes in AFTER heating. Do not heat it with the milk. Advocaat contains eggs, and if they are heated above 70°C they curdle. The drink becomes lumpy instead of creamy. Heat the milk first, then add the advocaat, then froth.
Frothing makes all the difference. After the advocaat, gradually increase the speed from 6 to 8 over 25 seconds. This beats air in and creates a creamy foam on top. Without this step it is just warm milk with a liqueur in it. With the foam it becomes a proper drink.
Why the advocaat curdles and the foam does not form
1. The advocaat curdles
This happens when the milk is too hot or the advocaat is heated for too long. The egg in the advocaat sets and small lumps form.
Our solution: Heat the milk to a maximum of 90°C. Then turn the Thermomix® down to 50°C. Add the advocaat and froth immediately. Do not reheat. The residual heat of the milk is enough.
2. Not enough foam
If the foam does not form properly, the speed is usually too low or the time too short.
Our solution: Gradually increase from speed 6 to 8, for the full 25 seconds. Do not stay at speed 4, it is not enough. And: whole milk (3.5% fat) froths better than semi-skimmed. For an extra-thick foam, use the butterfly whisk.
3. Too sweet or too strong
The ratio of milk to advocaat is a matter of taste. The recipe is a starting point, not set in stone.
Our solution: Start with less advocaat (2 tbsp per cup) and add more to taste. You can always add more sweetness, but you cannot undo it. The vanilla sugar already brings sweetness, so do not be too generous with both.
For children and non-drinkers
This drink also works without alcohol. Simply leave out the advocaat and use instead: 1 tablespoon of cocoa powder, 1 teaspoon of vanilla sugar, and a dollop of double cream. Froth as in the original. Children love it, and it tastes like hot chocolate with extra foam.
For adults avoiding alcohol: alcohol-free amaretto flavouring (available from baking suppliers) gives a similar flavour to advocaat, without the alcohol.
Hot Milk with Advocaat with chocolate, cinnamon, or coconut
Chocolate version: Add 1 tablespoon of cocoa powder or 30 g of dark chocolate to the milk and heat together. Richer and more chocolatey.
Spiced version: Add a pinch of cinnamon and nutmeg to the milk. Works particularly well in the run-up to Christmas.
Coconut version: Replace 100 ml of the milk with coconut milk. Top with desiccated coconut instead of cocoa.
When we make Hot Milk with Advocaat
A Christmas market substitute at home, a welcome drink on New Year’s Eve, a ski-trip evening after a day on the slopes, or simply a cold Tuesday evening in January. This drink needs no occasion. It fits whenever it is cold and grey outside.
Goes well after a bowl of potato soup or as a dessert drink after dinner. Anyone who makes their own chocolate advocaat with the Thermomix® has the perfect base for this drink.
Re-frothing Hot Milk with Advocaat the next day
This drink tastes best fresh. The mixture (without foam) keeps in the fridge for 1 to 2 days, but must then be reheated and re-frothed in the Thermomix® (3 minutes, 70°C, then speed 8 for 20 seconds). Freezing is not suitable.
Milk foam or cream topping? Finding the right ratio
With this drink we often face two questions: how strong should it be, and milk foam or real cream on top? Our base recipe uses 650 g milk to 150 g advocaat (ratio 4.3:1), which is mild and suitable for everyday. For a stronger version, use 500 g milk to 150 g advocaat. We would not go beyond that, otherwise the advocaat is more likely to curdle. For children, we replace the advocaat entirely with a tablespoon of cocoa plus vanilla sugar.
For the topping, we have tried both: the Thermomix® milk foam is creamy and integrates well, while a cold cream topping (50 ml whipping cream, whipped to stiff peaks, per cup) makes the drink noticeably more dessert-like. Our tip: foam for everyday, cream topping for guests or New Year’s Eve. Cocoa powder or grated dark chocolate belongs on top in either case.
