Mulled wine liqueur turns one bottle of dry red wine, 250 g of sugar, 250 ml of vodka and a classic mulled wine spice mix into 1 litre of festive liqueur. In the Thermomix® this takes exactly 20 minutes, and the mixing bowl holds the temperature steady at 80°C so the alcohol does not evaporate. Compared to classic mulled wine, the liqueur keeps for 6 months in the cupboard.
We fill the liqueur into 250 ml swing-top bottles, stick a handwritten label on each one and have a last-minute gift that every mulled wine lover will enjoy. One bottle of wine costing around 5 euros becomes 4 gifts of 250 ml each.
Mulled Wine Liqueur with the Thermomix®

- 1 unwaxed orange
- 130 g brown sugar
- 1 tbsp water
- 1 vanilla pod
- 1 cinnamon stick
- 1 star anise
- 1 pinch nutmeg
- 400 g red wine medium-dry
- 300 g dark rum

Juice the orange.
Wash the orange thoroughly in hot water, dry it, grate 2 tsp of zest and juice it.

Heat the ingredients.
Add the orange juice and zest with the sugar and water to the mixing bowl and heat for 3 min / 100°C / speed 2.

Add the vanilla seeds.
Slit the vanilla pod lengthways, scrape out the seeds and add them to the mixing bowl.

Heat the ingredients again.
Add the cinnamon stick, star anise, nutmeg and red wine and leave to infuse for 10 min / 80°C / reverse direction / speed 1.

Sterilise the liqueur bottles.
Meanwhile, sterilise the liqueur bottles with boiling water.

Add the alcohol.
Leave the spiced wine to cool, add the rum and mix for 5 sec / reverse direction / speed 3.

Fill into bottles.
Strain through a sieve into the liqueur bottles and store in the fridge.
Tips:
- Place a piece of kitchen cloth inside the sieve for an even clearer liqueur.

Which wine, which vodka
We use a full-bodied, dry red wine (Dornfelder, Pinot Noir, Merlot, Tempranillo). Sweet wines such as Lambrusco or Beerenauslese do not work here as the liqueur becomes cloyingly sweet. Italian and Spanish wines bring more tannin structure than German ones, which gives the liqueur depth. For the vodka, a neutral 40% supermarket vodka is perfectly fine. No premium vodka is needed as the spices mask any vodka nuances.
Many recipes suggest grain schnapps or brandy instead of vodka. We prefer vodka because it does not mask the pure wine flavour. The brandy version tastes more like a warm egg punch.
The spice blend makes the liqueur
2 cinnamon sticks, 4 cloves, 2 star anise, 1 tsp cardamom pods, the zest of half an unwaxed orange, 1 cm of vanilla pod. We leave this classic mulled wine blend to infuse for 15 minutes at 80°C, then steep for 4 hours in a sealed bottle. If you do not have a fresh orange to hand, use ready-packed dried orange peel from the baking aisle. 1 tsp is the right amount.
The Bavarian State Institute for Viticulture notes that mulled wine loses its aromas above 80°C. We stick strictly to that temperature, and the mixing bowl helps with its precise temperature control. Achieving this precision on the hob without a thermometer is difficult.

Straining, bottling, resting
After the infusion time, strain through a coffee filter or a fine piece of muslin. For an especially clear result, strain twice. Fill into sterile bottles (sterilise in the oven at 120°C for 15 minutes). Leave to rest for at least 1 week, ideally 2 to 3 weeks, until the flavours come together harmoniously. Serve cold straight from the cupboard or warm gently (not above 60°C). A lovely gift wrap with a raffia ribbon completes the look.
Five mulled wine variations for Christmas
White mulled wine liqueur (Riesling instead of red wine, plus 1 slice of ginger), children’s punch liqueur (alcohol-free: red grape juice plus 2 tbsp apple cider vinegar), chocolate mulled wine (stir in 50 g cocoa at the end), berry variation (simmer 200 g frozen blueberries with the mixture), spicy version (steep 1 dried chilli for 5 minutes).
