Fresh cinnamon rolls for breakfast, without an oven. We knead the yeast dough in the Thermomix®, fill it with cinnamon sugar and butter, and bake the rolls in the air fryer at 170°C in 10 to 12 minutes. The result: golden brown, soft on the inside, caramelised at the edges. Once you have baked them this way, you will rarely switch the oven on for cinnamon rolls again.

  • 250 g plain flour Type 550
  • 120 ml milk
  • 30 g butter for the dough
  • 30 g sugar
  • 1 egg medium
  • 7 g dried yeast 1 sachet
  • 1 pinch salt
  • 40 g butter soft, for the filling
  • 60 g brown sugar for the filling
  • 2 tsp ground cinnamon for the filling
  • 80 g icing sugar optional, for the glaze
  • 2 tbsp milk optional, for the glaze

    Warm the milk and knead the dough.

    Add milk and butter to the mixing bowl. 2 min / 37°C / speed 2. Add dried yeast and sugar. Stir together 10 sec / speed 2. Add flour, egg and salt. 2 min / kneading mode. The dough will pull away from the sides and be slightly sticky, which is correct.

    Prove the dough.

    Cover the mixing bowl or transfer the dough to a lightly floured bowl. Leave to prove in a warm place for 30 to 40 minutes until doubled in size.

    Shape the rolls.

    Mix brown sugar and cinnamon together. Roll the dough out on a lightly floured surface to a rectangle of approx. 30 x 20 cm. Spread soft butter evenly over the surface, leaving a 1 cm border. Sprinkle the cinnamon sugar over the top. Roll up tightly from the long side. Cut with a sharp knife into 6 to 8 slices of approx. 3 cm each.

    Bake in the air fryer.

    Line the basket with baking paper. Place the rolls inside with enough space between them, no more than 4 to 5 at a time. Leave to prove in the basket for 5 more minutes. Then bake at 170°C for 10 to 12 min. Check after 7 minutes: the rolls should be golden brown, not dark brown.

    Glaze (optional).

    Stir icing sugar and milk together to form a thick glaze. Drizzle over the cinnamon rolls while still warm.

How to get perfect cinnamon rolls in the air fryer

Kneading yeast dough in the Thermomix® is easier than many people think. The mixing bowl handles the kneading at 37°C, keeping the yeast active without the milk getting too hot. We knead for 2 min on kneading mode, then the dough proves for 30 to 40 minutes in a warm spot. Roll it out, spread with cinnamon butter, roll up, slice. The air fryer then bakes them at 170°C in just 10 to 12 minutes, noticeably faster than a conventional oven. One important point: do not put too many rolls in the basket at once, they need room to rise.

Our tips

  • Baking paper is essential: The cinnamon sugar caramelises and sticks firmly. Without baking paper, you will struggle to remove the rolls from the basket undamaged.
  • Do not pack them too tightly: The rolls rise further during baking. Packing them too close together results in unevenly baked patches in the middle.
  • Soft butter for the filling: Cold butter tears the dough. The butter must be truly at room temperature and spreadable.
  • Prepare the night before: Store the shaped rolls on baking paper in the fridge overnight. In the morning, bring them to room temperature for 20 minutes, then place straight into the air fryer.
  • Reheating leftovers: Warm cooled rolls at 160°C for 3 to 4 min. They taste almost as good as freshly baked.
