Crispy chips from the Thermomix® and the air fryer: we tested the workflow repeatedly until the sticks crack on the outside and stay soft inside, without a drop of deep-frying fat.
Crispy Chips with the Thermomix® and Air Fryer

- 1 kg waxy potatoes e.g. Charlotte or Maris Piper
- 1,5 tbsp rapeseed oil or sunflower oil
- 1 tsp salt
- 0,5 tsp sweet smoked paprika optional
- 500 ml water for the steaming compartment

Prepare the potatoes (Thermomix®).
Peel the potatoes and cut into sticks about 1 cm thick. Soak in cold water for 10 minutes, then drain.

Pre-cook in the Varoma.
Place the sticks in the Varoma, add 500 ml water to the mixing bowl. Cook for 5 min / Varoma / speed 1, then pat thoroughly dry.

Season.
Toss the sticks with 1.5 tbsp oil and 1 tsp salt until every stick is coated.

Cook until crispy (air fryer).
Arrange the chips in a single layer in the basket. Cook at 180°C for 15 minutes, shaking once after 7 to 8 minutes. Serve immediately.
How to get chips crispy in the air fryer
The secret is the combination: the Thermomix® handles the prep work, the air fryer delivers the finish. We cut the potatoes into even sticks about 1 cm wide and soak them for 10 minutes in cold water. The water draws out the starch from the surface, and that is exactly the difference between soft and crispy.
After pre-cooking in the Varoma, pat the sticks thoroughly dry. That is the second essential step. Wet surfaces create steam in the air fryer, and steam means soft chips. For frozen chips: place them directly in the basket from frozen, 200°C, roughly 10 minutes, shaking halfway through.
Our tips
- Potato variety: Waxy varieties such as Charlotte, Annabelle, or Belana work best. Floury varieties go too soft inside and do not crisp up as well on the outside.
- Patting dry really pays off: Skip this step and you will not get a crust. Pat each batch for at least 30 seconds.
- Not too much oil: 1.5 tbsp is enough for 1 kg of potatoes. More oil makes the chips greasy, not crispier.
