Chocolate advocaat with the Thermomix® works so well because two cocoa sources do the job together: dark chocolate for body, cocoa powder for depth. The result is more intense than any version that relies on just one of the two. Add 10 minutes at 70°C, speed 3, and you have a creamy liqueur with no water bath, no thermometer, no lumps.
The difference from classic advocaat with the Thermomix® is immediate. Dark chocolate alone would give the liqueur a soft sweetness. Cocoa powder alone makes it flat. Only together do you get a rounded, slightly bitter chocolate flavour that stays interesting even after the third sip. We use dark chocolate with at least 60% cocoa content. Milk chocolate works too, but it makes the liqueur noticeably sweeter and less complex.

- 80 g dark chocolate
- 4 eggs
- 2 tsp vanilla extract
- 2 tbsp cocoa powder (unsweetened)
- 160 g sugar
- 200 g double cream
- 300 g milk
- 150 g rum
- 80 g Licor 43

Chop the chocolate in the Thermomix®.
Add the dark chocolate to the mixing bowl and chop for 4 sec / speed 8, then push down with the spatula.

Heat the liqueur.
Add the remaining ingredients and heat for 10 min / 70°C / speed 3.

Fill into bottles and leave to cool.
Meanwhile, sterilise bottles with boiling water. Fill the liqueur into the bottles, seal well, and leave to cool. Store in the fridge.
Tip: Want to boost the chocolate flavour? Simply increase the amount of cocoa powder.

Whole eggs, not just yolks
This recipe uses whole eggs, not just yolks. That makes the liqueur a little lighter than a yolk-only version and gives it a more pourable consistency. Anyone who prefers a denser, richer result can try the advocaat variation with Licor 43. For this chocolate recipe, we recommend whole eggs because they bind the chocolate more evenly.
70°C: why exactly this temperature
Raw eggs in a liqueur need heat. At 70°C, salmonella are reliably killed, but the egg stays liquid and creamy. Above about 80°C the egg sets and the liqueur turns grainy. That is a trap almost everyone falls into at least once when making advocaat on the hob and getting momentarily distracted. The Thermomix® holds exactly 70°C for the full 10 minutes. No thermometer needed, no constant stirring.

Rum, Licor 43, and the question of shelf life
The rum adds alcohol and with it shelf life. We treat the Licor 43 as optional, but it adds a light vanilla and citrus note that pairs very well with the dark chocolate. If you do not have any Licor 43, use more rum or simply leave that note out. The overall alcohol content should not drop too far, otherwise the liqueur will not keep for long.
Properly prepared and filled into sterilised bottles, the chocolate advocaat keeps in the fridge for at least 2 to 3 weeks. Sterilising bottles means rinsing them with boiling water and leaving them upside down on a clean cloth to dry. Two minutes of effort that makes all the difference. Give the bottle a good shake before serving, as the chocolate settles over time. This is normal and not a sign of spoilage.

Chop the chocolate first, then everything in one go
Other chocolate advocaat recipes melt the chocolate in a separate step at 50°C, then mix the egg mixture separately and add the milk and cream at the end. Three heating stages, three stops along the way. We do it differently: chop the dark chocolate briefly at speed 8, then add all the remaining ingredients without any detour and run the 10 minutes at 70°C, speed 3 straight through. The finely chopped chocolate melts evenly into the warm milk and cream mixture without anything burning or clumping. This saves two steps and at the end there is only one mixing bowl to wash.
