Salami Pizza with Cheese-Stuffed Crust (Thermomix®)

- 20 g olive oil
- 1 tsp brown sugar
- 140 g lukewarm water
- 1/2 cube fresh yeast
- 290 g flour, type 405 (plain flour)
- 1 tsp salt
- 125 g Mozzarella
- 1 garlic clove
- 350 g tomatoes
- 40 g tomato puree
- 1 tsp dried basil
- 1/2 tsp sugar
- 1 tsp salt
- 1/2 tsp pepper
- 180 g Gouda
- 80 g salami

Add all ingredients for the pizza dough to the mixing bowl and knead for 2 minutes / kneading mode. Set aside, cover, and leave to rise in a warm place for 1 hour.

Add Mozzarella to the mixing bowl, chop for 4 sec / speed 4 and set aside.

Peel garlic, add to the mixing bowl, chop for 3 sec / speed 9 and scrape down with the spatula.

Wash tomatoes, remove the stalks, cut into 3 cm pieces, and add to the mixing bowl with tomato puree, basil, sugar, salt and pepper. Chop for 5 sec / speed 5.

Cut Gouda into strips about 5 mm wide.

Preheat the oven to 220°C top and bottom heat.

Roll out the dough on a pizza stone, baking tray or pizza mat. The dough must overlap the edge.

Place the Gouda strips 3 cm in from the overlapping edge, all the way around the pizza, on top of the dough. Fold the overhanging edge over and press it down firmly.

Spread the tomato mixture, salami and Mozzarella evenly over the dough and bake on the middle shelf for 20 minutes.
