Crustless cheesecake from the Thermomix® is one of the recipes We bake most often. 1000 g low-fat quark, 100 g butter, 350 g tinned mandarins, 10 minutes of batter in the Thermomix®, 70 minutes in the oven at 160 °C fan. No shortcrust pastry, no blind baking. Just the creamy quark mixture with fruity mandarins.

- 350 grams mandarins canned
- 100 grams butter + a little more to grease the springform
- 180 grams sugar
- 2 sachets vanilla sugar
- 4 eggs

Mandarinen zugeben.
Fold in 2/3 of the mandarins with a spatula, pour the batter into the springform pan and spread the remaining mandarins on top.

Bake on the middle rack of the oven for 70 minutes, if the cake gets too dark, cover with aluminum foil.

Let the cake cool in a slightly open oven, then chill in the refrigerator.
Tip: Before serving, you can sprinkle the cake with a little powdered sugar.

Why no base: less work, more quark
A classic cheesecake has a shortcrust base that needs to be pre-baked separately. This recipe skips that entirely. The 1000 g quark combined with 2 sachets of vanilla pudding powder and 1 sachet of baking powder forms a mixture that holds itself together. The pudding powder absorbs the moisture and stabilises the texture. The result is denser and creamier than a cheesecake with a base, because the entire cake consists of pure quark mixture.
Preparing the mandarins properly: the crucial step
The 350 g mandarins (drained weight) really do need to drain thoroughly. We put them in a sieve for at least 10 minutes and press them gently with a spoon. Too much liquid from the tinned fruit makes the quark mixture watery, and the cake sinks during baking. Two thirds of the mandarins are folded into the batter later; the remaining third goes on top.
Butter and sugar beaten until fluffy at speed 4: how to get a light mixture
The 100 g butter goes into the mixing bowl in pieces and is melted for 3 minutes at 60 °C on speed 1. Then insert the stirring attachment, add 180 g sugar and 2 sachets of vanilla sugar, and beat on speed 4 for 3 minutes until light and fluffy. This step matters: the butter and sugar mixture needs to turn paler and gain volume. That is what gives the finished cake a loose, not too compact texture.
After that, remove the stirring attachment and add the remaining ingredients (4 eggs, 1 sachet of baking powder, 2 sachets of vanilla pudding powder, 1000 g low-fat quark) to the mixing bowl. 30 seconds on speed 4 is enough. No longer, or too much air is beaten in and the cake will crack.
70 minutes at 160 °C fan: why low temperature is key
Cheesecake does not tolerate high heat. At 160 °C fan, the egg sets slowly and evenly without the surface cracking or browning too quickly. The springform tin (26 cm diameter) goes on the middle shelf. If the surface is already browning strongly after 30 to 40 minutes, loosely lay a piece of aluminium foil over it without pressing it down onto the batter.
A non-stick springform tin is the best choice. We also grease it with a little butter so the cake releases easily afterwards.
Why the cake sinks and how We prevent it
Sinking in the centre is the most common problem with crustless cheesecake. The reason: the cake is moved too quickly from the hot oven into the cold kitchen. The temperature shock causes the set egg to collapse. After the 70 minutes We turn the oven off, open the door a crack, and leave the cake inside to cool for 30 to 45 minutes. Only then do We take it out, and once it is fully cooled We put it in the fridge.
Low-fat quark or full-fat quark: what We recommend
In the recipe We use low-fat quark because it brings less moisture and the cake turns out firmer. Full-fat quark makes the mixture creamier but also heavier. Anyone using full-fat quark should drain it in a sieve for a while beforehand, or extend the baking time by 5 to 10 minutes. With very wet quark (regardless of fat content) it helps to drain it in a sieve lined with kitchen paper for an hour before starting.
Cherry, chocolate, lemon: 3 variations without mandarins
- Cherry cheesecake: 350 g sour cherries from a jar (well drained) instead of mandarins. For a more intense colour, stir 2 to 3 tablespoons of cherry juice into the mixture.
- Chocolate cheesecake: 2 tablespoons of cocoa powder and 50 g of chopped dark chocolate in the batter. Reduce the sugar by 20 g because the chocolate adds sweetness. Leave out the mandarins.
- Lemon cheesecake: Juice and zest of 2 organic lemons instead of mandarins. Use only 1 sachet of vanilla pudding powder so the lemon flavour comes through.
Keeps for 4 days, tastes best on the second
The cake develops its full flavour after chilling in the fridge for at least 4 hours. On the second day it often tastes better than freshly baked, because the quark mixture firms up and the mandarins release their flavour into it. Covered, it keeps for 3 to 4 days in the fridge. To freeze, wrap the fully cooled cake in cling film and then aluminium foil. It keeps for up to 2 months in the freezer. To defrost, leave it in the fridge overnight.
What We serve with the crustless cheesecake
Anyone looking for the classic Thermomix® cheesecake with a base will find it there. For afternoon coffee, Thermomix® pancakes or Solero cake also work well. If you want to add a splash of homemade advocaat to the cheesecake: stir 2 tablespoons into the batter; it pairs beautifully with the vanilla. And as a lighter alternative to baking, Thermomix® rice pudding is just as quick to make.
