Nothing beats grandma’s lemon cake. It’s so juicy and lemony, hmmm, we can’t get enough of it. Today, dear grandma, we bake a lemon cake in the Thermomix®, which tastes no less delicious, but is mixed much faster.

Oh, and by the way: We baked the lemon cake from the Thermomix® for the tray today in the loaf pan. Of course, this also works, but you have to extend the baking time a bit. What we like most about this juicy lemon cake is that it stays fresh for several days. It doesn’t matter whether you bake it in a tray or in a pan. In addition, it usually tastes even better on the second day, because it is soaked through.

A juicy, fluffy cake for any occasion, which is also super quick to make.

Ingredients
  

For the dough

  • 6 eggs
  • 250 g sugar
  • 20 g vanilla sugar
  • 400 g butter
  • 50 g lemon juice
  • 400 g flour
  • 15 g baking Powder

For the icing

  • 300 g powdered sugar
  • 30 g lemon juice

Instructions
 

For the dough

  • Preheat oven to 180 °C top and bottom heat (160 °C convection oven). Cover a baking tray with baking paper.
  • Insert the stirring attachment into the mixing bowl. Add eggs, sugar, and vanilla sugar to the mixing bowl and mix for 1 minute/speed 4.
    6 eggs, 250 g sugar, 20 g vanilla sugar
  • Remove the stirring attachment, cut the butter into pieces, add to the mixing bowl with the lemon juice, flour and baking powder and mix for 30 seconds/speed 4.
    400 g butter, 50 g lemon juice, 400 g flour, 15 g baking Powder
  • Spread batter evenly on baking sheet and bake on middle rack for 20 to 25 minutes.
  • After baking, prick the cake with a fork.

For the icing

  • Add the powdered sugar and lemon juice to the mixing bowl and mix for 10 seconds/speed 4.
    300 g powdered sugar
  • Spread the frosting generously over the warm cake and let cool.
    30 g lemon juice

Tip: Ideal also for baking the day before, as it tastes almost better when soaked through.
