Oh, and by the way: We baked the lemon cake from the Thermomix® for the tray today in the loaf pan. Of course, this also works, but you have to extend the baking time a bit. What we like most about this juicy lemon cake is that it stays fresh for several days. It doesn’t matter whether you bake it in a tray or in a pan. In addition, it usually tastes even better on the second day, because it is soaked through.

Juicy lemon cake from the sheet from the Thermomix®

- 6 eggs
- 250 g sugar
- 20 g vanilla sugar
- 400 g butter
- 50 g lemon juice
- 400 g flour
- 15 g baking Powder
- 300 g powdered sugar
- 30 g lemon juice

Backofen heizen.
Preheat oven to 180 °C top and bottom heat (160 °C convection oven). Cover a baking tray with baking paper.

Eier schaumig rühren.
Insert the stirring attachment into the mixing bowl. Add eggs, sugar, and vanilla sugar to the mixing bowl and mix for 1 minute/speed 4.

- 250 g sugar

Teig mischen.
Remove the stirring attachment, cut the butter into pieces, add to the mixing bowl with the lemon juice, flour and baking powder and mix for 30 seconds/speed 4.
- 400 g butter
- 50 g lemon juice
- 400 g flour
- 15 g baking Powder

Teig backen.
Spread batter evenly on baking sheet and bake on middle rack for 20 to 25 minutes.

Teig einstechen.
After baking, prick the cake with a fork.

Zuckerguss mischen.
Add the powdered sugar and lemon juice to the mixing bowl and mix for 10 seconds/speed 4.
- 300 g powdered sugar

Zuckerguss verteilen.
Spread the frosting generously over the warm cake and let cool.
- 30 g lemon juice
Tip: Ideal also for baking the day before, as it tastes almost better when soaked through.
